I just read that milk with 3.2% fat content (the highest available here) is healthier than low fat milk. Fat in milk is good as it carries vitamins A, D, E and K and calcium. What is more, it doesn`t contribute to obesity at all. Generally, high fat milk even protects our bodies against cancer. This is exactly what my daughter, the natural food advocate, says about milk, and in particular raw, organic milk. She claims that homogenization and pasteurization of the whole-fat milk diminishes the benefits of the fat in the milk and may also make that processed fat detrimental to our bodies. That's the only kind of milk she and my son-in-law drink. My grandson also drinks it.

Think of it this way, If I process milk, I want to sell more of the more valuable (profitable) part of the milk, which is the fat. Milkfat is used in the production of ice cream, cheese, yogurt, butter, etc. If I can produce less milk and make a better living by convincing people to accept an jnferior product while maintaining current pricing, all the better. (Milk producers don't do this, processers do.) What better way to get people to accept less valuable milk than by telling them that milkfat is bad for them! But see, I've stepped in and solved this error of nature by removing it for you. (slick ad campaigns) This also hurts milk producers (farmers) because products that used to take 50 gallons of milk to produce now only takes 35. I personally buy whole milk just because reduced fat milk tastes like whey to me.
