Polish traditions wanted for film

Hello! I'm researching for a television show that will be filming in Poland next month, and I'm hoping for some location suggestions on where to go and who to talk with us on camera (in English). 

• Hunt for wild boar (or other in-season animal) and prepare a traditional bigos near Warsaw.
  
  
• Forage for mushrooms and eat a local family meal featuring Polish specialties (anywhere between Pultusk and Jonkowo).
  
• Catch and cure smoked eel near Nidzica.  

Any help would be very much appreciated. I'm hoping to talk with real people instead of places for tourists.

But to be honest, I couldn`t find too many photos of bigos consumption after a hunt - it seems this tradition is slowly disappearing.
