An interesting interview with a historian especially interested in culinary traditions who focuses on pre war traditions tvn24.pl/magazyn-tvn24/ostrygi-z-cateringu-czyli-wigilia-po-polsku,249,4316 Main points: - it is a myth that it was communists who nobilitated carp for Polish Christmas after the war. It had happened a few centuries before when carp was considered noble fish, served at aristocratic and royal tables. Communists only reduced the availability of other fish popular as Christmas dishes before the war. - oysters, snails and lobsters were very popular on wealthy families` tables 100 years ago. - the poor used to eat herrings - the cheapest food. - almond soup ( a recipe in the photo) was more popular than the red borsh - boiling fish was more popular than frying - popular species for Christmas Eve supper was tench, bass, pike and pickerel. - fish faggots/balls were very popular - carp ala Jewish (with almonds, raisins, in sweet sauce) is in fact a Polish invention. Jews adopted it from Poles.
