Offal is less and less frequent on the tables of Poles. Nevertheless, it is not difficult to find people who still appreciate not only their unique taste, but also nutritional properties. What is the thymus?

The thymus, however, has been unmatched for years in Italy or France.
Preparing the thymus gland is time-consuming. Initially, it needs to be soaked in milk or water for several hours, and then it is necessary to immerse the thymus gland in boiling water for a while. This will make removing any membranes easier.
The thymus can be fried in breadcrumbs, stewed with apples, and boiled in broth or baked. It tastes good not only hot, but also cold. Perfect as an addition to salads, scrambled eggs, omelettes or as a main course. It is also perfect as a stuffing for dumplings. Thymus enjoys the company of root vegetables and potatoes.
At a time when the thymus was often present on Polish tables, it was willingly served as a meat sauce. This specialty did not require a lot of work. It was enough to boil the thymus in the broth, then crush it thoroughly and season it. The aromatic sauce was created in such a simple way.
